In Mongolia, the reliance on durable cookware is driven by a harsh continental climate and a diet rich in proteins. The demand for cast iron vessels remains high because of their ability to maintain heat in freezing temperatures, which is critical for both traditional Ger heating and open-fire cooking.
However, the market is currently shifting. While traditional raw cast iron is still prized, there is a growing trend towards enamel coatings to prevent oxidation in humid summer months and to simplify the cleaning process in remote areas where water resources are limited.
The logistical challenges of the Mongolian terrain require cookware that is virtually indestructible. This has led to a preference for high-density iron casting that resists warping under the extreme thermal shock common in high-altitude outdoor cooking.
